I know nothing about buying meat. I'm pretty clueless, to say the least. Although, I can say that I know what ground beef is, but that's pretty much the extent of my meat knowledge. Pretty sad, isn't it?
This week I planned to cook a meal that called for 'kc steaks', so I asked my mom what that was. She's pretty knowledgeable but in this case was unable to shed any light. The recipe was for the crock pot and called for the kc steaks, a can of sliced mushrooms and a package of onion soup mix. That's it. I bought a round top round roast thinking it would suffice, and it did. But still, what the heck is a kc steak???
Can anyone educate me on meat? What is a kc steak? And any info on other meat basics (aside from ground beef) would be helpful too. I'm looking for information as to how different meats cook and what's best for certain dishes. Can you help me out friend?

Sorry, not much help in the meat department. I can say that Corned Beef is the easiest meal to make on the planet. Just a pot, water and boil. We had it tonight, and I actually impressed the usual cook in the house (not me).

Never heard of kc steak, sorry. As for other meats, I just know that I look at prices vs. names when I choose. And when we can, we buy a half or quarter beef from my dad or BIL, so it's all good no matter what you get.
Could it be a brand name? Or some kind of stake grown in Kansas City? Or Kinda-Cowardly? Or Keep-it-Cold?
Yeah, so no idea. I imagine any kind of steak would work.
I can't say for sure what KC stands for, but I use a very similar recipe for Rump Roast in the crock pot and it is fabulous. You could use the TOp ROund (I think that's what it is) too.

I have NO beef knowledge as we eat the moose and caribou my husband hunts in the fall.
Moose is awesome in the crock pot! Here is one our favorite recipes. I'm sure you can use a plain ol' beef roast. =)
French Dip Sandwiches
In the crock pot, put the following and cook on low for 8-10 hours. Serve with a crunchy salad and hoagie rolls or pita bread. Yum!
1 3-4lb roast (we like moose!)
In a 2-cup measuring cup, combine the following gently, pour over roast and top with a bay leaf:
1 beef bullion cube
1 cup soy sauce
1 cup boiling water
1 tsp each: rosemary, thyme, garlic powder
A few pepper corns
Very good on a rainy, CA day....or a -44F day here in Alaska!!!! I"m hungry!
Sorry. I can't help either. We eat hamburger, chicken, and a roast once in a while. I keep it pretty simple here.
