A Potato What?

This Sunday we will be going to a pot-luck with our new home group. I told the leader to let me know what I could bring. She asked that I bring a potato dish.

Besides a potato salad, what are my choices??? I don't do much with potatoes let alone know of a dish that I could bring to group function! (although 'potato chips' have crossed my mind) Can you suggest an easy group-friendly recipe for me??? Help!!!

My girlfriend Desiree shared this recipe with me a while back and it is very good! She also made it apart of our Thanksgiving meal!

Baked Potato Salad

10-12 Med Potatoes cut into bite sized chunks
2 chicken Boullion cubes (optional)
1 lb sharp or Colby cheese
1/2 C ranch
1/2 C sour Cream
2 cloves garlic
1/2 lb cooked bacon

Preheat Oven to 325. Butter a 9x13 baking dish

Put potatoes into a large pot and fill with enough water to cover. Bring to a boil, adding the boullion cubes if desired and cook until tender but still firm, about 10 minutes. Drain and set aside.

(You can cook the bacon at the same time!)

In a large bowl, combine the ranch and the sour cream. Add the potatoes, cheese and garlic and toss to coat evenly. Salt and pepper can be added too.

Spoon into the baking dish and sprinkle crumbled bacon on top.

Bake for 30 minutes in preheated oven until golden brown.

You could take "funeral potatoes." They are delicious and not healthy!

1 bag of frozen hashbrowns (mostly thawed)
1 can cream of chicken soup
Sour cream (maybe half a small container)
milk (like half a soup can full)
Cheddar cheese
Green onions
bread crumbs

Combine the soup and sour cream. Add chopped green onions, shredded cheddar cheese and hashbrowns. Stir gently until it is all combined. Put in a 9x13 dish and sprinkle breadcrumbs on top. Cook at 350 for 30 or 40 minutes, until heated through and bubbly.

I have a recipe similar to the "funeral potatoes", but we call them "potluck potatoes"

1 bag shredded frozen hashbrowns
1 can cream of chicken soup
1 pt sour cream
2 cups sharp cheddar cheese shredded
1/2 cup butter (melted)
1 tsp salt
1/2 tsp pepper
green onions (I don't use them, someone in the family doesn't like them)


Mix all together and pour into a 9 X 13 dish. Sprinkle with paprika or corn flakes. Bake 45 minutes at 350 or until hot.

I was so going to post the funeral potatoes recipe. I love them. LOLing at Mary's comment, they are definitely not healthy. Probably why they taste so good.

Scalloped potatoes:

Slice potatoes and place in a baking dish. Layer the potatoes so that they are 4 or 5 deep in the dish. Dot the tops with butter. Add salt and pepper to taste. Pour milk until it rises to the bottom of the top layer. Cover with foil, and bake at 350 for 50 minutes. Take foil off, and bake another 10 minutes or until it's golden brown.
