Monterey Jack Enchiladas

The other day I asked for help with my menu selection and I have received many new recipes! Thank you to everyone who passed along new ones......my family thanks you too!

It has also been requested of me to pass along a recipe or two in exchange. So, here is my enchilada recipe. I only ask one thing.....that you think of me when you make it (you can refer to my 'weird' post from yesterday)!!!


~~~Monterey Jack Enchiladas~~~


1.5 lbs grated Monterey Jack cheese
1 C. (aprox.) diced onions
8 flour tortillas
2 chicken breast cooked and cut into small/bite size pieces

Scatter grated cheese, onions and chicken on tortillas and roll up adn place in 9x13 pan.

Add the following ingredients together in a sauce pan (see instructions below).

1/4 C. butter
1/4 C. flour
2 C. chicken broth
1 pint sour cream
1 can diced green chili peppers

Melt butter in sauce pan. Add flour to melted butter and dissolve. Add chicken broth to the sauce pan and bring to a boil. Then add sour cream and chili peppers to the mixture, but do not allow to boil.

Spread sauce on top of filled tortillas followed with a little grated cheese. Bake at 400 degrees for 20 minutes, or until browned on top.

Serve and enjoy!

I am assuming that the chicken is already precooked? Sounds good!

Oh, I forgot to say. I am glad that you enjoyed the Creamy Italian Chicken. I never thought of adding anything to it. Sounds even better!
