I had a fabulous idea this week. I'm sure you've never heard of it, so brace yourself for my brilliance. Are you ready?
As I made two dinners this past week, I made extra, on purpose!, and put them in the freezer for a later date!!!

Well, yes, I know what you're thinking. You're thinking to yourself "Hello Deanne, that's not a new idea. In fact they even have cookbooks for that sort of thing". I know that too, but my point is that I've never purposefully done it before. I even accounted for it when putting my weekly menu and shopping list together. And so I'm proud of myself. And I know I'll thank myself even more when I have one of those days when I feel the need to not cook and I can reach in my freezer for a finished homemade meal.
Yep, I'm brilliant. And I'm so thankful.

in case your curious, or just want a new recipe, I made (and froze!) enchiladas and chicken lasagna. now you have to share a recipe with me! (and I'll thank you for it!)

Love it!! I do that with lasagna and chili almost every time. They are messing and time consuming to make so might as well get as much as I can from it. But just did it the other day with meatloaf and pot pies.

Great idea! I clicked on the chicken lasagne recipe, but it went to the enchilada recipe. Can you hook me up with the lasagne???
